My favorite recipe from a little bakery called Hello Robin in Seattle, Washington! A gooey center with marshmallow bits on a toasted graham cracker topped with a big chunk of chocolate! What more could you want!? These cookies are better than the original campfire s'mores and are sure to become a family favorite treat!
Ingredients
2 3/4 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1 teaspoon baking soda
3/4 cup butter softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 cup packed mini marshmallows
36 square-sized store-bought graham crackers
2 Cadbury milk chocolate bars
Instructions
Line two baking sheets with parchment paper.
Whisk together the dry ingredients. In a separate bowl cream the butter and sugars. Add eggs and vanilla. Blend until fluffy. Add dry ingredients and mix until just incorporated. Fold in marshmallows.
Using a medium cookie scoop, scoop the dough into balls and place them on one of the prepared baking sheets. Freeze for at least 1 hour or overnight.
Preheat the oven to 400 degrees F.
Place the graham crackers on the prepared baking sheet. Place 1 ball of the frozen cookie dough on top of each graham cracker. Bake until the cookies are puffy and golden, about 9 minutes. Remove the baking sheet from the oven and quickly press 1 piece of milk chocolate onto each warm cookie.
