This lemon poppy seed scone recipe is fluffy and delicious! The perfect summer/spring dessert, filled with fresh lemon zest, poppy seeds, and topped with a yummy lemon glaze!
Ingredients:
1 cup flour
1/4 cup + 1 TBSP sugar
1 1/2 tsp poppy seeds
1 1/2 tsp baking powder
1/4 tsp salt
Freshly grated lemon zest from 1/2 a lemon
3 TBSP cold butter
1 egg
1/4 cup plain Greek yogurt
1 1/2 tsp vanilla
Glaze:
1/2 cup powdered sugar
1 TBSP butter
2 tsp fresh lemon juice
Instructions:
Preheat oven to 400.
Use a fork or pastry cutter to cut the butter into the dry ingredients.
Add eggs, yogurt, vanilla, and lemon. Stir everything together.
On a floured surface roll into 3 balls and flatten into 1 inch thick disk. Slice into 8 wedges. Place on a lined baking sheet and bake for 13 minutes until slightly golden. Drizzle with lemon glaze.
