Ingredients:
4 Cups powdered sugar
1 Stick butter
1 TBSP heavy cream
Tiny pinch salt
1 tsp vanilla
1/2 tsp peppermint emulsion
Food coloring
Instructions:
Beat the butter until creamy then add all ingredients together and blend until smooth. Sprinkle a little powdered sugar onto the countertop to prevent the dough from sticking. Don't use too much it'll dry out the dough and make it crackly. Cover the dough you aren't using with plastic wrap so it doesn't dry out. Roll dough into long logs about 1 inch thick. slice into mints. Spread the mints on parchment and allow to dry overnight. I usually double this recipe when making these for gifts. Store in an airtight container at room temperature for up to two weeks, or in the refrigerator for up to a month.
